ODORIJI to Sell Mizusawa 15 UDON ALE from October 10

ODORIJI will sell Mizusawa 15 UDON ALE, a 5.0% craft beer brewed with offcuts from Mizusawa udon production, on its EC site from October 10, 2026. The test run is 350ml cans limited to 480 units, with sales planned at restaurants, cafes, and retail stores along Mizusawa Udon Kaido and in Ikaho Onsen. Sakazuki Brewing handles brewing.

The offcuts left over at udon shops along Mizusawa Udon Kaido are crushed and held in temperature-controlled hot water, where enzymes from beer malt convert the wheat starch into sugar before fermentation. The result is a 5.0% beer with what the development team describes as a faint sweetness and a fruity note.

Planning comes from Enmusubi Craft by ODORIJI, whose planner previously worked on products at a major beer brewery. Brewing is handled by Sakazuki Brewing, with Naoko Kanayama, a former Asahi Breweries brewer, in charge.
